Brisket (leftovers from the Green Egg)
Avocados (2)
Sour Cream
Cheese (Mexican blend, sharp Cheddar, or whatever)
Scrambled Eggs (6ish)
Red Onion (just a few slices of one, diced)
Tomatoes, pico, salsa, or hot sauce...Torchy’s is the best!
Optional: fresh jalapeño
Flour or corn street taco tortillas

Scrambled Eggs:
Mix eggs, 1/4 c. milk, 1/4 tsp. salt, and 1 tsp. pepper and scramble. Cook in an oiled skillet.
Add cheese, onion, and brisket. Let sit while you make the tacos so it all warms up.
Tacos:
Warm up the tortillas in a wet paper towel for ten seconds in the microwave.
Add sour cream, then avocado, and then tomatoes or pico (or hot sauce). Top with egg and brisket. Enjoy!
