1 gallon peeled and cut up tomatoes
1 quart diced bell peppers
1 qt. diced onion
5 T minced jalapeno peppers
2 T minced garlic
1 cup white vinegar
2 tsp. cumin
2 tsp. cayenne pepper 5 tsp salt

Directions:
Directions:
Pour boiling water over tomatoes so they peel easily. Put them into blender to chop up. If tomatoes are quite juicy, skim off some excess juice and save in case you need to add it back later.

With tomatoes in large pot, add all other ingredients. Boil slowly 1 1/2 hours. It should get thicker as it cooks. If it remains thin, you can add tomato paste slowly to thicken. Stir and watch carefully as tomatoes stick and burn easily. Sample frequently. Process in hot sterilized clean jars 15-20 minutes in hot water bath.
