Heat skillet with 3 T oil
Stir fry briefly:
1/2 cup finely chopped celery
3/4 cup shredded cabbage 4 finely chopped scallions
Add and stir fry for 3 minutes:
1/2 cup diced shrimp
1/2 cup diced cooked pork
(You can use any meat you wish)
Add and stir fry 5 more minutes:
1/2 cup drained, finely chopped water chestnuts
1/2d cup bean sprouts
1 minced clove garlic
1/4 cup soy sauce
1/2 tsp sugar

Cool filling. Place 2 T. filling in egg roll papers. Seal flap with 1T flour and 2 T cold water. Fry until golden brown.
