½ c. salted butter
1 c. apple sauce
15 oz. pumpkin puree
2 tsp. pumpkin pie spice
¾ c. water

½ c. buttermilk
2 large eggs
2 tsp. baking soda
2 tsp. vanilla extract

2 c. flour
2 c. sugar
½ tsp. salt

Frosting:
8 oz. Neufchatel cheese - softened
½ c. salted butter - softened
1 lb. powdered sugar
1 Tbsp. milk (or as you need it)

Directions:
Preheat oven to 350º.
Melt butter, apple sauce, pumpkin puree and pumpkin pie spice. Mix till well blended and add water and stir.
In a small bowl combine buttermilk, eggs, vanilla and baking soda and mix and set aside.
Combine flour, sugar and salt in large bowl. Add pumpkin mixture and blend, add buttermilk mixture and blend well.
Pour in buttered sheet pan, spread evenly and lift pan about 6" and drop on counter to flatten it out.
Bake for 20 minutes. Don't over bake. It should bounce back when touched and be lightly browned.

Frosting:
Beat softened cheese, butter, sugar and milk in mixer till smooth, thick, but thin enough to spread.
Smooth over on top of cooked cake. Enjoy!
