12 oz bulk Italian pork sausage
2 tsp oil if need to fry
8 oz white mushrooms, sliced
1/2 cup onion, yellow or white
12 large eggs
1 cup milk
1/2 cup salsa
2 TBL flour
1/2 tsp baking powder
2 cups grated cheddar or monterey Jack cheese
1/2 tsp salt
freshly ground pepper
sour cream and more salsa for topping.

Preheat oven to 350 degrees. In a large skillet over medium heat, cook sausage, breaking it up with a spoon, until it starts to brown, about 5 minutes. Add oil, if needed. Add mushrooms and onion , and cook until pink is no longer showing in sausage and vegetables are tend, about 10 minutes longer. Transfer to a lightly sprayed or oiled 9x13 baking dish.

In a bowl, whisk together eggs, milk, salsa flour and baking powder. Add the cheese, salt and pepper to taste and pour over meat mixture. Bake uncovered until set, about 40 minutes. Let stand for 10 minutes. Served top with sour cream and more salsa if wanted.

Use Johnsonville Italian sausage or the Festival brand. Don't use Jimmy Dean for this if you can help it.

The original recipe calls for 4 cups of cheese, two in the casserole and two on top but that is way to much for me. If you want to sprinkle more on top before baking go ahead.

This is so good, one of our families favorites.
