1 8-11 oz package pitted dates
1 cup sugar
1 cup hot water
1 cup chopped walnuts
1 cup butter
2 cups firmly packed brown sugar
2 eggs
3½ cups flour
1 tsp vanilla
½ tsp baking soda
½ tsp salt
½ tsp cream of tartar

Directions:
Directions:
Combine dates, sugar, and hot water in a medium saucepan. Cook over medium heat, stirring constantly for 6 - 8 minutes. Remove from the heat and add 1 cup walnuts. Cool the filling completely.

Cream butter in a large bowl, gradually add brown sugar, add eggs, and beat well.

Combine flour, soda, salt, cream of tartar. Add to cream mixture, stirring well.

Divide dough into 3; roll out into 12" squares on wax paper. Spread each roll with ⅓ of the date mixture, then roll each square like a jelly roll. Chill overnight. Cut into ¼" slices and place 2 " apart on parchment-lined cookie sheets. Bake at 350º 8 - 10 minutes. Cool on wire rack.
