1 lb loaf of cinnamon raisin bread (a heavy bakery-type loaf, not one of those dry chintzy loaves. OR use a 1 lb package of cinnamon rolls--I wouldn't worry if they were frosted. Or a cinnamon or apple fritter bread.)
1 12-oz cream cheese, cubed
1 cup diced peeled apples (optional)
8 eggs
2½ cups half and half
6 Tbsp butter
1/4 cup maple syrup

Cube the bread. Cube the cream cheese

Coat a 9 X 13 baking dish with cooking spray. Arrange ½ of the cubed bread in the bottom of the dish. Sprinkle the cream cheese cubes evenly over the bread, and top with the apples, if you're using them. Top with remaining bread

In a large bowl, beat the eggs with the cream, butter, and maple syrup. Pour over the bread mixture. Cover with plastic wrap, and press down so that all bread pieces are soaked. Refrigerate at least 2 hours or overnight.

Bake in a 325º oven for 45 minutes, or until firm on top. Let stand for 10 minutes before serving with more maple syrup.
