Ingredients:
Ingredients:
Cake
1 French Vanilla Cake Mix
1 stick butter, melted
3 eggs
1 cup whole milk
Fresh orange juice--a cup or so

Filling
2 15-oz containers whole milk Ricotta cheese.
8 oz cream cheese, softened and cubed.
2 tsp orange peel, grated
½ cup white chocolate chips or miniature chocolate chips, partially crushed

Frosting
1¾ cups confectioner's sugar
3 Tbsp whole milk
3 Tbsp butter, softened
2 cups heavy or whipping cream
¾ tsp vanilla

Directions:
Directions:
Cake: Mix the cake ingredients together with an electric mixer. Beat at medium speed for at least two minutes or until well-blended. Pour into 2 9" greased and floured cake pans. Bake @ 350º until done. Cool and split each layer in two. Sprinkle fresh orange juice over cut sides of al layers.

Filling: Whip the ricotta cheese on high speed at least 10 minuets to reduce "gritty" texture. Then whip the ricotta with all of the rest of the filling ingredients except the chips together for several minutes until well-incorporated and creamy. Fold in chocolate. Spread filling between layers.

Frosting: In a small bowl, mixer at medium, beat butter, milk, 1¾ cuts confectioners' sugar, and ¾ tsp vanilla until smooth, add more milk if necessary until frosting has easy spreading consistency. In a large bowl, mixer at medium, beat heavy whipping cream until soft peaks form; fold confectioners' sugar mixture into cream. Spread over top and sides.

Personal Notes:
This cake is delicious. Another way that I make it is to bake the cake in a 9 X 13 pan and cube it up. Then I make a trifle with it, layer cake, strawberry, filling, and the the frosting on top. It's marvelous.
