1 cup, nonfat milk
2/3 cup, all-purpose flour
2 eggs or 1/2 cup, low cholesterol egg substitute
3 tablespoons, granulated sugar
Non-stick vegetable spray

Apple Filling
2 cups, sliced apples
3 tablespoons, brown sugar
1/2 teaspoon, cinnamon

Directions:
Directions:
Preheat oven to 400 degrees.
Combine milk, flour, eggs and sugar in a blender, and whip on high until completely smooth.
Spray a 9-inch pie plate with non-stick spray and pour in batter. Bake for 30-35 minutes until puffy and brown.
Combine apples, sugar and cinnamon in a small, microwave-safe dish. Microwave on high for 5 minutes or until tender.
Spoon apple filling into center of the pfannkuchen. (The baked pancake will collapse shortly after being removed from the oven.) Cut into four servings.

An apfelpfannkuchen is a German pancake (pfannkuchen) topped with apples (apfel). This healthy breakfast dish is especially good for a brunch or as a special breakfast after a morning workout.
To make it more heart healthy, use low cholesterol egg substitute instead of whole eggs.
