1 pkg active dry yeast
1.5 - 2 cups warm water (100º-115º)
2 tsp granulated sugar
3.75 - 4 cups flour
2 tsp salt
1.5 - 2 Tbsp softened butter for buttering bowl and pan

Directions:
Directions:
Add yeast and sugar to 1/2 cup of the warm water, set aside.
Add 3.75 flour to large bowl. Add salt and blend well. Pour 3/4 cup of the warm water into the flour and mix well. Add yeast and stir until dough forms a ball. Knead in the mixer or by hand until dough springs back when you make an indentation with 2 fingers. Let rest for a few minutes.
Place in greased bowl, turning so it is completely covered. Cover and place in draft free location until doubled, 1-2 hours.
Transfer to a floured board and knead for 2-3 minutes. Pat into oval, form loaf and place in greased loaf pan. Cover and let raise again until double in bulk, about 40 - 60 minutes.
Preheat oven to 400º. Brush the dough with cold water and make 3 slashes on a diagonal. Place pan in center of lower oven rack for 35 minutes up to 50 minutes, start testing for doneness at 35 minutes. Bread should sound hollow when tapped.

Makes 1 - 9x5x3 inch loaf or 2 - 8x4x2 inch loafs
