3 cups all-purpose flour
3/4 cup brown sugar (packed)
4 tsp baking powder
1 tsp salt
1 tsp cinnamon
1 1/4 cups shredded, unpeeled zucchini
1/2 to 1 cup raisins
2 egg
1 1/4 cups milk
1/4 cup oil

Directions:
Directions:
In a large bowl bowl mix well: flour, sugar, baking powder, salt and cinnamon. Stir in zucchini and raisins; set aside. In a small bowl beat eggs, milk and oil. Slowly add to flour mixture. Mix well. Turn into greased and floured 9x5x3 inch loaf pan. Bake in 350 degree oven for 60 to 70 minutes. Cool in pan for 10 minutes. Invert on rack; cool. Slice thin to serve.
