2 large eggplants
2 lbs lean ground beef
1 bag shredded sharp cheddar cheese
1 bag shredded mild cheddar cheese
1/2 stick butter
1 tbsp salt
pepper to taste
1 egg
1 cup milk 1/4 lb cracker crumbs

Directions:
Directions:
Prep wheat oven to 350 degrees.
Brown ground beef in a skillet; then set aside. Peel and boil eggplants until tender; drain. In large mixing bowl mash with salt, pepper and butter. Add beef and cheeses, reserving some cheese to sprinkle on top. Pour into a 9x13 inch baking dish. Beat egg and milk. Pour over mixture. To with cheese and cracker crumbs. Bake for 45 to 50 minutes.
