10 C. ground zucchini
4 C. onion, chopped
2 green peppers, chopped
2 sweet peppers or pimentos, chopped
⅓ C. salt
2 C. vinegar
4 C. sugar
4 Tbsp. cornstarch
1 tsp. turmeric
1 tsp. nutmeg
1 tsp. celery seed

Directions:

1. Coarsely grind the zucchini, onion, green pepper, and sweet peppers. Mix with salt. Let stand overnight in refrigerator. Drain and rinse in cold water.
2. Mix together remaining ingredients. Add zucchini mixture and boil 20-30 minutes.

You can use good sized zucchini for this so the skin is tender.
