Dressing:
1 Garlic clove, mashed to pulp
1 Egg yolk
1 tbsp Lemon juice
1 tsp Worcestershire sauce
5 tbsp Salad/olive oil
2 tbsp red wine vinegar
1/4 tsp salt
1/8 tsp pepper
1 tin anchovies, chopped small
1/2 cup Parmesan cheese

Salad:
1 large head romaine lettuce
2 cups Croutons
1/2 cup Grated Parmesan


Directions:
Directions:
Make dressing in salad bowl by combining all ten ingredients, mixing well
Tear lettuce into bite size pieces, toss with dressing in bowl
Add croutons and cheese, toss lightly once more. Serve immediately

Croutons:
Cut French bread into 1/2-3/4 inch cubes
Fry garlic oil until brown
Garlic oil:
Slice 1 garlic clove into 1/2 cup olive oil
Let stand for 4 hours
Discard garlic
