12 Large Eggs - room temperature
2 Tablespoons Dejon mustard
1 Tablespoon mayonnaise
1 Tablespoon lemon juice
2 Small jalapenos(seeded and finely chopped)
1/3 Cup finely chopped onion
1 Celery stalk finely chopped
Salt and ground pepper
Sweet Paprika

Boil eggs
*check tip section for perfect easy to peel boiled eggs*
Half the eggs and put yolks to a bowl and mash with fork. Stir in mustard, mayo, lemon juice, jalapenos, onions, celery and season with salt and pepper. Mound the egg white halves and sprinkle with paprika.
