Lima Bean Salad Recipe

2 (10 oz.) packages of frozen baby lima beans
4 T Chopped parsley
1 Clove of garlic, minced
½ Spanish onion, chopped
¼ C Salad oil
Salt and pepper to taste
3 Tomatoes, peeled and sliced
½ Spanish onion, sliced thin and separated into rings

Directions:
Directions:
Cook the beans according to the package directions. Cool.
Combine the parsley, garlic, chopped onion, oil, vinegar, salt, and pepper and mix this with the cooled beans.
Allow all of this to marinate overnight in the refrigerator. Do not skip this step.

To serve, mound the beans into the center of a platter and surround it with the sliced tomatoes and onion rings. Drizzle the tomatoes and onions with more of the dressing if you want.
