Olive Oil as needed to coat
4 tbsp unsalted butter
1/2 yellow onion, chopped
4 lbs Roma tomatoes, quartered
2 tbsp tomato paste
2 tbsp garlic, chopped
1/2 tsp dried basil leaves
4 cups vegetable stock
1/2 cup heavy cream
kosher salt and black pepper
Fresh basil leaves to garnish

1. heat oil and butter in a pot over medium heat
2. add onions and tomatoes. Sauté until very tender, about 15 minutes
3. Add tomato paste garlic basil, and stock and simmer for 30 minutes or until stock is reduced by half. remove from heat and, with an immersion blender, pulse until smooth.
4. Bring back to medium heat and add cream. Simmer for 10 minutes or until soup is reduced to desired consistency. Season with salt and pepper to taste. Top with additional fresh basil.
