2 cups elbow macaroni
1 stick of butter
1 med onion chopped
1 clove garlic minced
1/3 cup flour
2 cups o f milk
1 – 2 tablespoons Dijon mustard
2 tspns Worcestershire sauce
3 stalks of celery diced (this sometimes gets eliminated if we don't have celery on hand)
˝ lb ham diced- sometimes I eliminate this or sub bacon crumbles
1 cup grated Swiss
1 cup sharp white cheddar
1 cup medium cheddar
˝ cup sour cream
2 tablespoons chopped parsley
Parmesan Cheese for Topping

Directions:

Preheat oven to 375°. Butter a 2 ˝ quart casserole baking dish.

In a large pot cook the macaroni until done

In a medium saucepan melt the butter over medium heat. Add the onion and garlic and sauté until the onions are translucent.

Stir in the flour until a paste is formed. Whisk in the milk, mustard, and Worcestershire sauce and bring to a boil. Reduce the heat to med-low and continue cooking stirring occasionally until the sauce has thickened.

Remove pan from heat and stir in the cheeses. Then stir in the sour cream, celery, ham cubes, and then add the macaroni.

Place in casserole dish and cover with foil. Cook for 20 minutes and then remove foil and cook for an additional 5 – 10 minutes until the top is slightly brown. Sprinkle with parsley and parmesan cheese before serving.

This was a recipe that Hal shared with me and I have modified a few times as the boys were growing up. A comfort food that is great on its own or as a side dish.


3 stalks of celery diced usually doesn't happen and it is still the most delicious

˝ lb ham diced- (Hal's original recipe calls for Ham but I sometimes eliminate or sub bacon)

We have subbed out cheeses based on what we had and it turned out fine, too.
