1 pint fresh oysters
1/3 cup flour
1 tsp salt
1/8 tsp black pepper
1 egg
1 tbsp water
2/3 cup cracker crumbs
1/4 cup butter (or oil)

Directions:
Directions:
Drain oysters well. Coat in mixture of flour, salt and pepper. In a small bowl, beat together egg and water. Dip floured oysters in egg mixture. Roll in crumbs to coat. In medium pan or skillet, heat butter (or oil). Fry oysters until brown, about 5 minutes on each side, turning once. Serve with lemon wedges, tartar sauce, cocktail sauce, etc..
