1 cake yeast
4 T lukewarm water
4 3/4 c flour
3 T C. sugar
4 eggs
1/2 c cream
1/2 c melted butter
4 T Madeira
1/2 t salt
4 T raisins
4 T currants
1/2 t mace (optional)
1/2 c candied chopped orange peel

Directions:
Directions:
Add the yeast water and 3/4 c of flour to a bowl, and let rise for 30 minutes. Combine the other ingredients and mix well. Combine both mixtures adding the rest of the flour. Mix until a smooth elastic dough forms.

Let rise for about 1 hour. Put into a greased round pan and let rise for about 20-40 minutes.

Bake in a hot oven for about 10 minutes and then a moderate oven for about 50 minutes.

Rich yeast bread, almost cakelike. Often served with a rum sauce for dessert. It is also served sliced at breakfast.

Apple juice can be used in place of Madeira.
