1 Tbsp olive oil
2 cloves garlic, minced
1 lb gr beef, turkey or chicken
1 c. chopped onion
1 c. chopped celery
2 c. chopped carrots
2 c. chopped cabbage
1 c. chopped spinach
28 - 32 oz tomatoes
32-49 oz chicken broth
15 oz small white beans
8 oz sliced mushrooms
water, pepper, Italian seasoning
In large pot, heat olive oil and brown gr. beef, turkey or chicken. Add 2 minced cloves garlic. Add onions, celery, carrots, cabbage, spinach.
Pour in tomatoes, chicken broth, white beans and sliced mushrooms.
Add 4 cups water, pepper and Italian seasoning.
Simmer for 2-3 hours.
Add parmesan cheese when serving. Serve with french bread.
