1 cake yeast
1/2 c water
2 c rolled or quick oats
2 c boiling water
2 T shortening
1/2 c honey
4-5 c flour
2 t salt

Directions:
Directions:
Scald the oats in the boiling water and add the shortening and honey; set aside until lukewarm. Once cooled add 1 c flour, the water, and yeast. Mix well. Let rise for 1 hour.

Add the rest of the flour and the salt. Knead. Let rise until doubled.

Shape into 2 greased loaf pans and let rise again until doubled. Bake in a hot oven for 10 minutes and then in a moderate oven for 45 minutes.
