1 cake yeast
3/4 c water
1 egg
2 T melted shortening
1 t salt
2 T sugar
Zest of 2 oranges
3/4 c orange juice
4 cups bread flour

Directions:
Directions:
Combine flour, yeast, sugar, and salt in bowl of stand mixer.

Add zest, egg, shortening, warmed water, and warmed orange juice.

Mix until a soft and elastic dough forms.

Let rise until doubled.

Divide dough in half and shape into 2 loaves. Place on parchment lined baking sheets and let rise again for about 30-40 minutes.

Brush with egg was or glaze of choice (see helpful tricks in beginning of book), and score before baking in a hot oven for 10 minutes and then in a moderate oven for 50 more, or until center reaches 200F.

Bread Comes out very dense in a loaf pan. Best to shape and bake on sheet pans.
