1 cup butter, room temperature
2 cups brown sugar
2 tsp vanilla
2 eggs
2 1/2 cups flour
2 tsp baking powder
1 tsp sea salt
1 cup very finely chopped pecans

Preheat your oven to 350.

Cream together the butter and sugar.

Add the vanilla and egg and mix until combined.

Sift the flour, baking powder and salt into the wet ingredients and mix until just combined.

Fold in the pecans until evenly distributed.

Drop by the heaping teaspoon onto a pan lined with parchment or a Silpat. You want them to come out about half dollar sized. Perfect little bites.

Bake at 350 for 9-11 minutes. You just want to see just a little golden brown around the edges at the bottom. If they're still gooey in the middle when you pull them out, they'll cool soft. If you like crunchy, given them another minute.
