Banana Cake


Ingredients:

1¼ c. ripe bananas (the riper the better for flavor)
⅔ c. buttermilk (divided ⅓ c. and ⅓ c.)
2 large eggs
2½ c. sifted all-purpose flour
1½ tsp. baking powder
⅔ c. butter
1⅔ c. granulated sugar
1¼ tsp. baking soda
1 tsp. salt
1 c. chopped nuts

Mash bananas with fork and mix in ⅓ c. milk. Mix the other ⅓ c. milk with eggs (separated from other for now). Put banana/milk mixture and all dry ingredients in mixing bowl, except egg/milk mixture. Beat 2 min. then add egg/milk mixture and beat 2 min. more, mix in nuts. Put batter in greased 13x9x2" pan or 15x10x1" rimmed cookie sheet. Bake at 350º for 30-40 min., until toothpick comes out clean. Don't overbake as cake will continue to cook for a little while after being taken out of oven. Reduce cooking time to 20-25 min. for a rimmed cookie sheet. Cool before frosting.
 

Cream Cheese Frosting

8 oz. cream cheese, softened
2 T. vanilla extract
3½ c. sifted powdered sugar
2½ T. butter
½ c. finely chopped walnuts

Directions:
Directions:
Beat all ingredients with mixer until smooth and well mixed. Frost cake with icing and top with finely chopped nuts, if desired.
