Ingredients: 8 large green cabbage leaves 1 tbsp extra-virgin olive oil 1 onion, chopped 2 cloves garlic, minced 1 cup can/frozen/fresh corn 1 cup shredded Monterey jack cheese 1 cup shredded cheddar cheese 1 can black beans 1 cup chopped cherry tomatoes 1 packet taco seasoning mix Salt & pepper 1 lb ground beef (you can use turkey or chicken)

Directions:Preheat your oven 350degrees
Large skillet on your stovetop (medium heat) add olive oil Cook your opinions and garlic until soft Add your choice of meat Drain your meat (once cooked) Add taco seasoning, salt pepper - stir your seasoning. Once seasoning is mixed in- add your black beans, tomatoes, and corn. Cover and slightly lower your heat so that all your flavors cook together. CONSTANTLY STIR YOUR MIXTURE!
Once your tomatoes are soft you can cook your cabbage
Large pot of boiling salt water cook your cabbage leaves until soft (6-7minutes)
Tong out your cabbage leaves- pat dry your leaves.
Add your skillet mixture and both cheeses into your cabbage shell
Roll like a burrito
Place your burritos into a cooking pan
Sprinkle more cheese ontop
Pop into the oven to bake for 10-15 minutes
