1 can artichoke hearts, 14 oz., drained and chopped
1 package frozen chopped spinach, 10 oz., thawed and drained
1 container yogurt, plain, low-fat, 8 oz.
1 cup mozzarella cheese, low moisture
¼ cup chopped green onion
1 clove garlic, minced
2 tablespoon red bell pepper, chopped, optional

Directions:
Directions:
1. Preheat oven to 350ºF. In a bowl, combine all ingredients except bell pepper; mix well. Pour mixture into 1-quart casserole dish or 9-inch pie plate.
2. Bake 20 to 25 minutes, or until heated through. Sprinkle with chopped red bell pepper and serve with crackers, if you like.
