2 2/3 C All Purpose Flour (3 C total)
1/3 C Semolina Flour (if you don't have it, omit it and use all purpose)
4 Eggs (room temp)
1 t Olive Oil
1/2 t Salt
Warm Water

Directions:
Directions:
In a stand mixer add flour and salt and combine well. I a small bowl combine egg and olive oil and combine well, then add to flour bowl. Mix at medium speed until mixed well, about 3 minutes. If dough appears too dry, add a small amount of the warm water.

Once dough is well mixed and forms a ball, pour onto lightly floured counter and knead several minutes. Wrap tightly in plastic wrap and let stand at least 20 minutes (longer is fine).

Once dough has rested, divide in 4 pieces and run through a pasta roller (or use a rolling pin). Cut the pasta into the desired widths and lengths and then place on floured baking sheet and let dry slightly.

Boil in well salted water for 7-8 minutes (depending on the thickness of the pasta).
