18 ounces fresh fettuccine
1-1/2 cups heavy cream
2 tablespoons fresh lemon juice
1/4 cup of butter
2 teaspoons of minced garlic fresh or squeeze bottle prepared
2 cups grated Parmesan or Asiago Cheese
2 teaspoons grated lemon zest
Pinch freshly grated nutmeg
Salt and freshly ground white pepper


NOTE: IF ADDING SHRIMP - 15 SHRIMP CUT IN HALF AFTER COOKING OR 25 WHOLE SHRIMP. 2 TABLESPOONS OF OLIVE OIL AND 2 TABLESPOONS OF BUTTER. SALT AND PEPPER THE SHRIMP ON BOTH SIDES.

1) Cook the pasta in a large pot of boiling salted water with couple of tablespoons of olive oil - until tender but still firm to the bite, stirring occasionally.
2) Melt butter in a large skillet just until it melts DON'T BURN. Stir in 1-1/2 cups of the heavy cream and the lemon juice in a heavy large skillet to blend over medium low heat. Then add in garlic and cheese and whisk quickly, heating through. Turn to a simmer.
3) Add the remaining 1/2 cup of cream. Add the lemon zest, nutmeg, salt, and white pepper. Toss the pasta mixture over low heat until the sauce thickens slightly, about 1 minute.

NOTE: IF ADDING SHRIMP - PUT THE PASTA LAST.

BIG TIP: Shrimp preparation in a separate skillet. Melt two (2) tablespoons of butter in a skillet and add two (2) tablespoons of olive oil. Rinse and discard shell of shrimp and season both sides with salt and pepper. Sauté them until both sides are pink. Then add to your finished Alfredo dish and mix in. If dividing your shrimp - do this before adding to your Alfredo sauce. NOW ADD YOUR PASTA AND MIX THROUGHLY.

GARNISH: With fresh chopped parsley.
