1/2 stick butter
onions, bell pepper, celery
1 tbsp garlic
1.5 lbs thin sliced chicken breasts
32 oz unsalted (or reduced sodium) chicken broth2.5 cups rice
Salt, pepper, cajun seasoning, hot sauce to taste

Directions:
Directions:
Season chicken w/ cajun seasoning
Put instant pot on saute
When it's hot, drop in the butter and saute vegetables
Remove vegetables and place into bowl
Drop in chicken breasts and brown them
Add garlic when they're almost done
Saute 1-2 more mins
Add chicken broth, vegetables, rice, salt, pepper, cajun seasoning, and hot sauce and stir up to mix
Cook on high pressure for 20 mins
Let naturally cool for 10 mins
Release steam
