2 3/4 cups flour
2 teaspoons cream of tartar
3/4 teaspoon each of cardamom, cinnamon, and cloves
1/4 teaspoon salt
1/4 teaspoon white pepper
1 cup (2 sticks) butter
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla (or half vanilla, half chai extract if you have it)
Additional sugar for rolling

Directions:

Mix all dry ingredients. Cream butter and sugar till light and fluffy in large mixer bowl. Add eggs and vanilla. Gradually add dry ingredients on low speed till well mixed. Cover and refrigerate for 2 hours or till dough is firm and easy to handle.

Shape into 1" balls and roll in sugar (flavored sugar is great if you have some). Place about 2" apart on parchment paper or ungreased baking sheet. Bake 6-8 minutes at 400 degrees or until lightly browned. Cool on wire racks.

These are really good cookies. I rolled them in anise sugar...enhanced the spices even more!
