½ cup chopped onion
1 small container fresh sliced mushrooms (Baby Bella)
¼ water
1 tsp. chopped garlic
⅓ head cauliflower
1 ¾ cups spiral pasta (rotini)
1 can condensed cream of chicken soup
1 ½ cups cooked chicken (left over from roasted chicken)
½ cup milk
2 tsp. Worcestershire sauce

Salt and pepper to taste

Topping
¼ cup shredded cheese (Mexican blend)
¼ cup grated parmesan cheese (cheap powered type)
¼ cup Italian bread crumbs©

Directions:
Sauté onion and mushrooms in sauce pan until cooked down add garlic water and salt to help finish the cooking and flavor. Cut heat on sauce pan.

Separate cauliflower into flowerets and cook in salted boiling water for 5 min. or until al dente. Add to sauce pan (by spooning out with slotted spoon).

Bring water back to boil, maybe add more salt. Add pasta to boiling water. Cook until al dente (10 min in my case).

While pasta is cooking add cream of chicken soup, cooked chicken, milk, Worcestershire sauce, and black pepper to sauce pan.

When pasta is done, use slotted spoon to add it to the sauce pan. If more liquid is needed add some of the pasta water.

Mix everything in sauce pan and add to 9 X 13 pan. Place in 350º oven for 15min.

Mix topping ingredients. After first 15 mins for casserole, top with topping mix and cook another 15mins (should be bubbly on sides and hopefully some middle spots.

Let rest for 10 mins and serve.

This was just made with what we had and needed to cook. The cauliflower could certainly be replaced with something else or maybe even omitted. We also added a very small amount of chopped fresh tomato, because we had it left over from another meal.
