2 large eggs
1/4 cup sugar
1 cup milk
2 teaspoons pure vanilla extract
8 slices stale white sandwich bread
1/4 cup canola oil
Powdered sugar, for serving

Directions:
Directions:
In a large shallow dish, whisk the eggs with the sugar until the sugar is dissolved. Whisk in the milk and vanilla. Add the bread slices and soak until all the custard is absorbed. Heat oil in a medium skillet over medium heat. Working in batches of two, fry the bread until golden brown on both sides, about 4 minutes total. Repeat process with remaining bread slices. Serve warm with a generous dusting of powdered sugar.
