1½ quarts chicken stock
2½ cups diced potatoes
1 cup chopped onion
2 cups egg noodles
1 package frozen California-style vegetables
2 cans Cream of Chicken Soup
2 lb Velveeta cubed
1 can of mushrooms, drained (optional)

Directions:
Directions:
Combine the first 4 ingredients in a large pan. Bring to a boil and boil for 2 minutes.

Add the frozen veggies and boil for 10 minutes

Add the soup, velveeta and mushrooms. Cook on low heat until the cheese melts.

Back in 1982 Sue Moore and I lived in an apartment in Quincy, IL kind of across the street from Kelley's Pub (which is still there--I think). They were famous for this soup.

A friend of mine sent me the recipe. You can monkey around with any of the veggies, but this is the basic. Of course, it's not remotely good for you, but it tastes great!
