1/2 dozen large potatoes 1 stalk of celery 2 hard boiled eggs sliced 1/2 onion minced 1 Tbsp parsley salt & pepper 1/2 dozen slices of bacon cooked crisp and diced
Sauce 2 eggs well beaten 1/2 C. vinegar 1/2 C. cold water 1/4 tsp salad mustard
Boil potatoes in their jackets. When soft peel and cube. Add celery, parsley, and onion and bacon. Combine beaten eggs, sugar, mustard, salt and pepper and water. Stir well. Pour into hot bacon drippings in skillet. Continue stirring until is well thicken and looks glossy. about 5-8minutes. Pour over potato mixture, stir and top with sliced eggs. Serve Hot or Cold
