Butter Tarts Recipe

1/4 cup softened butter
1/2 cup packed brown sugar
2 eggs
1 tsp vanilla
1/2 tsp lemon juice
pinch nutmeg
1 cup maple syrup

Directions:
Directions:
Cream together butter, sugar eggs. Add everything but raisins. Mix well with beaters.

Place tart shells on baking sheet. ( lined with parchment paper)

Ladle liquid into tart shells. Fill almost to top. They will rise up as they bake, but then sink so you want lots of filling. (Not like muffins that you only fill 2/3 full!)

If you like raisins put 5 or 6 in each tart shell before pouring liquid over.

Bake in 375 * oven for 20 mins.

Grampa Bill liked his without raisins and called them syrup tarts.

I usually double this recipe. If maple syrup seems too pricy you can use all corn syrup--or I generally use half corn syrup and half maple syrup. These freeze well. I use frozen tart shells.
