1/4 cup feta 1 tbsp milk salt pepper 1 cup crust free diced bread 1/2 cup water 2 1/2 lb ripe tomatoes quartered 2 cloves garlic 1/2 serrano chili with seeds 1 tbsp sherry vinegar 1 tsp sugar pinch of cumin 6 tbsp olive oil 1/2cup chopped and seeded cucunber1/2 cup toasted green pistachios 4 leaves chopped basil

In a bowl break up feta with a fork add milk salt/pepper beat until smooth put in freezer 2 hours In a bowl combine bread water squeeze the bread set aside. In a food processor, add salt pepper put garlic chili bread tomatoes vinegar sugar cumin and 4 tbsp olive oil blend then work through a sieve into a bowl stir in cucumber cover and chill 3 hours serve with basil pistachios drizzle olive oil over the top with a fork scrape cheese to make a snow over soup.
