About 8 russet potatoes (Measure the potatoes in your baking pan)
3 cups cheddar cheese or cheese of your choice
4 tbsp unsalted butter
4 tbsp flour
2 tsp garlic paste
2 cup while milk

Bakes for about 1 hour 10 mins


Cooking Process

Cut your potatoes with a mandolin to ¼ inch thick. Soak in water to prevent from turning brown.

In a sauce pan on low heat, add your butter and allow to melt. Once melted, add in your garlic and allow the garlic butter mix to come to temperature for about one minute.

Once your butter has come to temp, then add your flour. Mix well and continue whisking for about 2 minutes once the flour has incorporated into the butter mixture.

After about 2 minutes, your rue should be golden brown. Once the rue is golden brown, it is ready to add the milk. Add the milk little by little, and incorporate the milk into the rue.

Once everything is mixed, add in about 1 ½ cup of cheese, I add close to 2 cups of cheese. I like a thick cheesy consistency.

Incorporate the cheese and mix well.

Strain and dry your potatoes

Pour the cheese sauce over the potatoes and fold in the sauce to coat the potatoes evenly.

Put the coated potatoes in your baking pan, top with remaining cheese and cover with foil.

In a preheated oven, cook for 40 minutes covered and the last 20 – 30 minutes uncovered until the top is golden brown.

Cheesy potatoes of any kind is one of my favorites, I mean who doesn't like cheesy potatoes? This is so easy to make, the soft potatoes with the cheesy sauce and bits of charred cheese on the sides is such a wonderful side dish.
