1/2 cup butter
1 cup brown sugar
7 to 9 pineapple slices
maraschino cherries
3 eggs (separated)
1 cup granulated sugar
5 tbsp pineapple juice
1 cup flour
1 tsp baking powder
dash of salt

Directions:
Directions:
In a large baking pan, melt butter and cover with brown sugar. Place pineapple slices in pan, putting a cherry in the middle of each slice. Beat egg whites until stiff; set aside. Beat egg yolks, gradually add granulated sugar. Mix in pineapple juice, flour, baking powder and salt. Fold in beaten egg whites. Pour over pineapple. Bake at 375 degrees for 30 minutes. Turn upside down on a cookie sheet or tray while still warm. Remove from pan.
