1 C. milk, at room temperature
tsp. salt
1 C. all-purpose flour
3 Tbsp. butter, melted

1. Place eggs in medium bowl and cover with hot water (as hot as your tap will go). Let them sit for 10 minutes. Heat oven to 450 and move oven rack to lower position to prepare for huge popover! Grease popover pan thoroughly inside each cup as well as around top edges. With your whisk, beat eggs together, milk, and salt until they are combined. Yolks should be completely blended in.
2. Add flour and whisk until mixture is frothy and large lumps are gone. Then quickly stir in melted butter. Divide batter between prepared popover cups. They should be about full.
3. Bake popovers for 20 minutes in hot oven and then reduce heat to 350. Bake for another 10-15 minutes. Popovers will be very golden brown. Serve warm.
