4 slices bacon, cooked and crumbled
1 medium onion chopped
25-30 small shrimp, peeled and devaned
1 can rotell
5-6 mushrooms, sliced
polish sausage, sliced
salt and pepper to taste
2 cups cooked white grits
old bay seasoning to taste
garlic powder to taste
scallions
32oz chicken broth
cheese to taste
1-8oz cream cheese
1 lemon

Directions:
Directions:
Cook grits using chicken broth instead of water and double the amount of butter for the amount of grits you are cooking. when grits are taken off stove, stir in cream cheese and shredded cheese. Set aside.

Cool and crumble bacon.

Saute onion, mushrooms and sausage in butter. Add rotell and simmer for 15 minutes. Add shrimp. Simmer 10 minutes. squeeze in juice of 1 lemon. Serve over cooked grits, topped with bacon.
