4 Tbsp Olive Oil
3 Cups Sweet Potatoes, roughly cut
½ of an Onion, diced
1 Red Bell Pepper, sliced
Salt & Pepper to taste
Pinch Paprika
Pinch Cumin

2 Cups Spinache
15 oz Black Beans
Avocado sliced

4 Poached Eggs (Cooked how you like)

1. In a medium pot add olive oil, sweet potatoes, onions, red pepper slices, paprika, cumin salt & pepper to taste. Cook on medium heat until sweet potatoe in tender but not to soft.

2. Add spinache and cook until spinache is soft and wilted.

3. Add black beans and cook until beans fully cooked. Take off the heat cover and set aside.

4. Make some poached eggs and slice some avocado.

5. Add some of the cooked potato mixture to a bowl, place one poached egg on top and some sliced avocado. Enjoy!!
