1 Tbl olive oil
1 1/2 cup peeled, seeded, and chopped tomatoes
2 tsp. minced garlic
1/2 cup butter, softened
2 tsp. grated lemon rind
1/2 tsp. salt
1/8 tsp. pepper
1/4 cup minced fresh basil

Directions:
Directions:
Heat oil in skillet, add tomatoes and garlic, saute 10 minutes or until tomatoes form a puree that will mound. Let cool. Put the butter in food processor or mixing bowl and beat in the tomatoes and remaining ingredients. Roll in plastic wrap and place in freezer until firm. Slice butter and use at room temperature on fish, chicken, or veggies.
