⅓ Cup Butter
⅓ Cup Flour
1½ Cups Milk
8 oz White Cheddar, grated
¼ Cup Jalapeno, diced
1 Cup Onions, diced
½ Cup Green Bell Pepper, diced (Dice some extra to sprinkle on top)
1 tsp Cilantro

7 Eggs, whisked
1 lb Ground Pork Sausage

Cherry Tomatoes, sliced in half to place on top.

* Pre-Heat Oven to 350ºF


1. In a medium saucepan melt butter. Add flour, & milk whisk.

2. Add to saucepan white cheddar cheese, & jalapeno, stir until cheese is melted. Take off heat set aside.

3. In a medium saucepan melt a Tbsp of butter. Add diced onions, bell peppers, & cilantro. Saute for about 1 minute.

4. Add eggs to saucepan withe sauteed onion mixture and scramble cook together. Sprinkle some salt & pepper to taste.

5. Add ground pork sausage & ½ cheddar jalapeno mixture stir together until well combined. Add this mixture to 5 soft tortilla rounds. Roll each one and place into greased baking pan. Pour the other half of the cheese mixture on top. Sprinkle some cherry tomatoe halves on top and diced green bell pepper.

6. Bake for 25-30 minutes.
