2tbsp butter
3/4 cup dry red wine
2 shallots (finely chopped)
1/4 teaspoon dried thyme
1 bay leaf
2 cups beef stock or make it vegan with a rich veggie stock
Salt (to taste)
Ground black pepper (to taste)
Optional: extra 1 teaspoon butter (cold; for make-ahead)

Directions:
Directions:
Sautee the shallots just till transparent ( don't brown )
Add the wine, the thyme and bay leaf, and cook over medium low heat until the wine has evaporated by about half

Now add the stock, and reduce again till about half the volume

This concentrates the flavor

Strain this mix. You only want the sauce
Continue to cook until thick enough to coat the back of a spoon

Finish with butter
