Follow recipe for scallopini
Top with a mix of this and bake 20 minutes till the cheese melts and the topping bubbles

8 large plum tomatoes, cut in half, scrape ou the seeds
1/2 tsp salt
1 small onion - cut in wedges
2 big cloves of garlic peeled and cut in half
about 3 tbsp olive oil
1 tbsp balsamic vinegar
1/4 tsp pepper
1 tsp mixed herbs ( fresh or dried )

Oven to 450or broil setting

In mixing bowl stir all ingredients and add seasonings of your choice ( dried oregano, Italian seasoning mix, etc )

Spread the mix on a cookie sheet
Broil until the tomatoes start to blister

Remove and spoon on top of the chicken scallopini. Turn oven down to 325
Top with shredded cheese

Bake at 325 until the cheese melts

Extra herbs on top if you like
