1 lb. ground beef
1 egg
1/4 c. bread crumbs
salt and pepper
2 medium carrots grated fine
2 medium potatoes grated fine
1 small onion grated fine
2 cans cream of mushroom soup

Directions:
Directions:
Mix all ingredients except soup. Shape into balls with a scoop or flatten meat mixture to about 1 in thickness, score meat into a grid and cut, then roll into balls. Dust with flour and brown in a little oil or non-stick pan, or bake in oven until almost done. Remove to casserole dish and pour soups over with a little water. Bake for 30 minutes at 325º. Serve plain or with cooked rice. Can be prepared a day ahead and then baked before serving.
