Bacon Bourbon Balls Recipe

3/4 c Bourbon
1 box Nilla Wafers (16 oz)
1 cup pecans
1/2 lb bacon, cooked and chopped, almost finely
1/4 cup cocoa powder, divided
1/4 cup confectioners' sugar, divided
1/4 cup light corn syrup (you can use 1/8 c corn syrup, 1/8 c maple syrup)
1/2 cup of sprinkles

1. Heat oven to 325. Spread pecans on a sheet pan, and toast in the oven for about 8 - 10 minutes, until lightly toasted. Let cool before finely chopping.

2. In a food processor, add Nilla Wafers and pecans and finely chop. Add to a large bowl.

3. Add 1/4c of cocoa powder, 1/4 c of confectioners' sugar, bourbon and corn syrup to the Nilla Wafer mixture and stir to combine until smooth

4. Roll dough into 1/2 balls and place on a cookie sheet lined with parchment paper

5. Place sprinkles in a bowl. Roll the bourbon balls in the sprinkles and then place in mini cupcake paper. Cover for at least 2 hours or until firm. Store in a sealed container
