Prime rib from Conger meat market 8#

-get rib roast with bone in
-Take roast out of the refrigerator at least 3 to 4 hours ahead of time to ensure it reaches room temp before cooking
-rub entire surface with quality olive oil and then with your dry rub
(Rub contains garlic powder ,salt, pepper, tyme)
-while rubbing meat set.oven temp to 500
-insert meat thermometer in thickest part of meat(WiFi or blue tooth works best because its hard to see in oven with regular type)
-initially cook roast 5 to 6 minutes per.pound at 500
(10 lb roast.would be 50 to 60 minutes)
-once time runs out on initial cooking time, turn off oven
Do not open the oven at all for 2 hours (that means you pops)
-after 2 hours watch internal temp and take out of oven at 135 for medium rare
-Let meat rest under a loose foil tent for at least 12 minutes
-cut rib bones off the roast and them slice portions against the grain and enjoy (meat will look undercooked its not!!!!)
