5 slices bacon crisp and crumbled
1 T butter
2 small shallots minced
2# Brussel sprouts halved
Kosher salt
1/2 tsp cayenne pepper
3/4 C heavy cream
1/2 C shredded sharp cheddar
1/2 C shredded Greyere

Directions:
Directions:
Preheat oven to 375º. Cook in heavy oven proof pan bacon and drain. Melt butter in bacon grease. Sauté shallots and sprouts. Add salt and cayenne. Cook stirring for 10 minutes. Remove from heat. Drizzle with cream. Top with cheese and bacon. Bake until bubbly about 12-15 minutes.
